
Do you love the caribbean sea? I do. I loves its diferent colors and to be in its wonderful beach. When I'm in the caribbean beach my favorite food is a coconut rice whit its delicious flavor. So I describe the recipe for you can cook a delicious coconut rice.
Ingredients
- 1 fresh coconut
- 1 cup rice
- 2 tablespoonful vegetable oil
- 2 tablespoonful granulated sugar, taste Salt
- 1/4 cup raisins, optional
Preparation

- Start by cracking the coconut. Using a knife, poke a hole into the softer of the eyes. Using a flat-head screw driver, open the other, harder eye. Pour out the coconut water into a bowl and reserve.
- Using a sharp knife or flat head screw driver, separate and scrape out the white meat of the coconut. Using a vegetable peeler or a sharp knife, remove the skin of the meat.
- Cut the meat into 2-inch chunks and place in a blender with the reserved coconut water. Blend until well mixed, and repeat the straining process above over another bowl. This is called coconut milk and this liquid will be used to cook the rice. Set it aside. Discard the coconut solids.
- In a caldero or heavy bottomed pot over medium-high heat, bring the reserved milk to a boil. Reduce heat, stirring occasionally, removing the milk that sticks to the sides of the pot. The milk will reduce, leaving behind solids. Allow the solids to brown slowly and caramelize. Keep stirring to make sure the solids don’t burn. Once they’ve reached a dark brown color they’re ready.
- Add the rice to the pot, stirring well and combine with the browned coconut bits. Add the vegetable oil and stir again to combine. Add 2 cups of water or more coconut milk (make the full 2 cups).
- Add 1 tablespoon of sugar and then taste the water to check sweetness. Season with a little salt. Add raisins, if using. Stir well to combine.
- Increase the heat to medium high and bring the rice to a boil. Reduce heat to medium and continue boiling until most of the liquid has been absorbed and small craters form on the surface. Cover, reduce heat to low and cook for about 20 minutes, or until rice is cooked through. Cover and let rest for 10 minutes before serving.

The first time that I was in the sea, when I was clild, my mon gives a coconut rice, since this moment I love coconut rice because it is really tasty,
I love the flavor since remind me the sea, and of course I would love to live
there some day in my life. I think this kind of rice tastes good with
all the sea food. When I eat this kind of rice I feel
like I´m next to the sea, enjoying relaxing days.
When I eat a coconut rice I remember the firt time that I know the sea.
