RECIPE:
SANCOCHO IN FIREWOOD FOR 10 PERSONS:
Ingredients:
ü 10 or 12 liters of water
ü 2 hens
ü 6 pounds of potato
ü 6 pounds of yucca
ü 6 plantain
ü 5 cobs
ü 2 pounds of tomatoes
ü 2 pounds of branch onions
ü 250 grams of bell peppers
ü 250 grams of garlic
ü 5 chicken substance cube
ü Pepper
ü Salt
ü One pinch of flour
Preparation:
In a pot boil water put the meat with the plantains into chunks and the chicken substance cubs and cook for 40 minutes. Then add the hens with the potatoes, the yuccas and the cobs portioned. Then add chopped the tomatoes, the branch onions, the bell peppers, the garlic, the pepper, the salt and the pinch of flour and cook for 30 minutes more, until everything gets soft. Serve with rice and cabbage and tomatoes salad.
Since that I have memories, my father made trips every weekend to a river called El Suan. The place is beautiful with crystal water, amazing rocks and waterfalls. We always fished, swam and climbed the rocks to jump from there. My father always invited many people, around ten or twelve persons. He prepared a big pot, the firewood, the meat and other ingredients for the more delicious Sancocho. This recipe is very special to me because my father always prepared one secret ingredient that he put into the Sancocho. This ingredient was call “magical powders” and consisted in one part of flour, chicken substance cubes, pepper, oregano, laurel and saffron, and then all ingredients were mixed and kept in a container until arrive to the river. The women always prepared the other ingredients the side of river while the men made the stove and placed the pot on the fire. My father added the “magical powders” to the Sancocho and the lunch was delicious. My father taught me to prepare this spices for make the more delicious Sancocho in firewood.
